If you love Sicilian food and would like to learn how to prepare it using traditional ingredients and methods, then this is the course for you!
Throughout the centuries, Sicilian-style cooking has been strongly influenced by various conquerors, kingdoms and many different cultures (Spanish, Greek and Arab) resulting in a delicious blend of styles and flavors found nowhere else in Italy. Unique, fresh and with powerful flavors, it’s a fact that Sicilian cooking is widely known as one of the premier cuisines in all of Italy. There is no better way to learn how to cook Sicilian food than by taking a cooking class from someone who knows the local food and wines. Chef Donna Patricia or Giuliana will guide you through each course explaining the history and tradition behind each dish and its importance to Sicilian cuisine.
Most of our cooking courses have been limited to a maximum of 10 participants so that you receive personal direction and feedback. Bigger goups can be arranged upon request.
The courses are held in a typical 18th century Noble Palazzo located just in front of the main Cathedral and a 15 min walk from the Capo Market. Our market tours start mid morning because that’s when the markets are the most vigrant and active.
We only use fresh and seasonal ingredients to ensure authenticity and because of this our daily menus will change in accordance with seasonal and market availability. All of our dishes are based on the more historically important Sicilian recipes, focusing on pasta, fresh fish/meat, vegetable dishes and delectable sweets.
A day spent cooking with Chef Patrizia is not simply a cooking lesson in a beautiful location, it’s also a fascinating journey through Sicilian culture and its food.
Here is how your day will unfold.
She will meet you in the morning and take you on a shopping tour of the vibrant and colorful Capo Market. Take in all the sights, sounds and amazing smells of the market while being introduced to many foods you have never seen before. You will help to select fresh seasonal ingredients in anticipation of creating an amazing meal. On the way to the cooking studio you’ll enjoy a pleasant walk through Palermo experiencing the stunning, baroque beauty of its architecture. Palermo is without a doubt one of the most interesting artistic cities on the Mediterranean Sea.
Arriving at the cooking studio housed inside a very historic and beautifull Palazzo, you are welcomed to the kitchen with a refreshing glass of Sicilian wine while you unpack your market purchases and discuss the delicious menu that lay ahead of you.
A lunch menu in a truly authentic Sicilian style will typically consist of:
- A primo (pasta)
- A secondo (fish or meat)
- A side dish such as ‘’eggplant caponata’’ or other seasonal vegetables
- Dolce (dessert)
During the preparation you will leatrn about and taste local wines and cheeses, olives and the extra virgin olive oil made in Nucidda, our country house location. In Nucidda we also provide cooking classes, wine tastings, parties and other foodie experiences you can enquire about.
The actual cooking class is paced leisurely over approximately 2 hours at which time we now get to have a seat at the table and enjoy all our hard work. Desert will be enjoyed with a glass (or 2) of homemade limoncello!
At the very end of our class each participant will receive a certificate of accomplishment signed by the Chef. If you would like to take the reicipes home with you, our newly published cookbook entitled “Seriously Sicilian – Authentic Recipes for Hungry Families’’, is available for purchase so you do not need to take notes! Just chill out and drink vino!
